The founder of Real, Damn Good Food, Chelsie Savage, is a chef and a nutritionist, and she swears by cold-pressed juice. Chelsie says: “I like to have juice first thing in the morning on an empty stomach when your body is just like a sponge, so whatever you get first is soaked up. I like to drink juice first, but then if I want more of a meal replacement or something a little bit more substantial that’s going to give me energy over a period of time, I’ll do a smoothie.” So what’s so great about cold-pressed juice?
“Cold-Pressed Juice” may sound like just another example of slick marketing; however, it is a powerhouse source of nutrition, and there are benefits to drinking it regularly. But first, what exactly is cold-pressed juice? The term refers to the process of using a hydraulic press to extract the juice from fruits and vegetables by compressing them between two plates at a very high pressure. This process differs from the typical everyday pasteurization process, which involves using high heat to preserve foods. When juice is pasteurized, the same heat that kills bacteria also helps to prolong shelf life. So pasteurized orange juice will last for some time, but cold-pressed juices should be enjoyed within a few days.
